Luis and I have gotten in the rhythm of cooking nights. Every week, we try to cook together at least once or twice a week. We started doing it because eating in saves you tons of money and also because I wanted to learn to cook. Luis cooks really well and I struggle with it but after about a year, I have gotten far :).
So, Tuesday night we cooked Mexican food! We didn’t cook the regular tacos or tortillas though – we wanted something different and healthy. We incorporated Mole Sauce to give the dish extra yum yum and it turned out amazing. Here’s what we did.
- Cooked brown rice
- Seasoned ground turkey with garlic, salt and pepper. Cooked it with coconut oil (spray), onions, tomatoes and green peppers.
- Prepared the Mole Sauce – very easy to make. We just mixed Mole Sauce with chicken stock and brought it to a boil.
- Cut out some guacamole.
The Mole Sauce was a great addition to our dish for some unusual flavor and change of routine. You can definitely make more than one plate with the Mole Sauce from Dona Maria – We had plenty left for the rest of the week!
