Happy Friday!! How was your week? With the Holidays, I feel like everyone’s schedule gets way more hectic than it should. Running around to get presents, going to this and that holiday party, secret santa brunch. Let’s just take a second to think about “Why SO many plans?” sure, we want to spend time with the people we love and care about but I just feel there’s an extra level of stress surrounded around the Holidays – with trying to get everything perfect, we forget about enjoying the moment, slowing down and gearing up for the new year.
This week, instead of going out to some fancy dinner, I opted to adding a different ingredient to my dinner making it a “fancy” one in my mind. Rice in ingrained in almost all of our South American plates so my recipe is pretty simple, actually:
- Make rice the same way your are used to. Once it’s ready and super hot, add Salemville blue cheese and mix it up.
I cannot tell you how delicious my rice tasted – it made my plate, restaurant worthy and that made me really happy after a super long day at work.
I used the Salemville Amish Blue Cheese Crumbles, but they have Gorgonzola cheese if you like that better!!
